Wet drywall does not recover. The gypsum core loses its integrity once saturated, and a board that has been wet is structurally different from one that has not, however dry it feels by the time anyone looks at it.
The cavity behind matters more than the board in front. Insulation that has been wet holds moisture against the framing for weeks, and closing a wall over it is how a repair becomes a mould problem.
We take readings before and after and write them down. It is the only way to show the wall was dry when it was closed, and it is the first thing an insurer asks for.
Cutting back further than looks necessary is usually right. Water travels along the bottom plate and wicks up through the board, so the visible damage is almost always smaller than the actual damage.
